Chef John’s Buttered Hot Rum

For the dough:

8 c. unsalted butter, at room temperature

1/2 cup firmly packed dark brown sugar

1/4 tsp. pure vanilla extract

1/2 tsp. ground cinnamon

1/8 tsp grounded ginger

1/4 tsp. ground nutmeg

1/8 tsp ground cardamom

1 pinch ground cloves

1 pinch of salt

For drinks:

6 tbsp. heavy cream

1-1/8 cups dark rum

4-1/2 cups boiling water, or as needed

1/8 tsp ground nutmeg, or to taste

Place the butter, brown sugar, vanilla extract, cinnamon, ginger, nutmeg, cardamom, cloves and salt for the batter in a mixing bowl and cream with a spatula until that everything is well mixed.

To prepare the drink, place about 2 tablespoons of batter in a festive, heatproof mug. Add 1 tablespoon of cream, 3 tablespoons of rum and fill halfway with a little boiling water. Stir with a spoon until the paste dissolves and top up with more water. Garnish with a pinch of nutmeg. Repeat until all 6 drinks are made and serve immediately.

Dream night drink

1 cup milk

1 C. honey

2 drops vanilla extract

1 pinch ground cinnamon

Pour the milk into a microwave-safe mug and place it in the microwave. Cook over high heat until milk is very hot and begins to froth, about 3 minutes. Stir in honey and vanilla, then sprinkle with cinnamon before serving.

chai tea

1-1/2 liters of water

4 black tea bags

10 whole cardamom seeds

2 cinnamon sticks, broken in half

1 C. black peppercorns

3 tablespoons of white sugar

In a saucepan, bring the water to a boil. Add tea bags, cardamom seeds, cinnamon and black pepper. Bring back to a boil. Immediately add the sugar. Remove the pan from the heat and let stand for 5 minutes.

Mulled cider

6 cups apple cider

1/4 cup maple syrup

2 cinnamon sticks

6 whole cloves

6 whole allspice berries

1 orange zest, cut into strips

1 lemon zest, cut into strips

Pour the apple cider and maple syrup into a large stainless steel saucepan. Place cinnamon sticks, cloves, allspice berries, orange zest and lemon zest in the center of a washed cheesecloth square. Fold the sides of the cheesecloth over to enclose the bundle, then tie it with a length of kitchen twine. Place the spice packet in the cider mixture.

Place the pan over medium heat for 5 to 10 minutes, or until the cider is very hot but not boiling. Remove the cider from the heat. Discard the spice packet and pour the cider into tall mugs or mugs, adding a fresh cinnamon stick to each serving if desired.

Quick Gingerbread Latte

1/2 cup of milk

1/2 cup of water

1 tablespoon of white sugar

1 tablespoon of instant coffee

1 pinch ground ginger

1 pinch ground cinnamon

1 pinch ground cloves

1 pinch ground nutmeg

1 tablespoon whipped cream, or more to taste

Whisk together milk, water, sugar, coffee, ginger, cinnamon, cloves and nutmeg in a microwave-safe bowl. Heat in microwave until hot, about 2 minutes. Pour latte into mug; top with whipped cream.
